This recipe is so easy AND cheap! It’s a meatless alternative for those nights you want to whip up a quick meal that looks as though it’s taken an hour to prepare.
• 1 lb tortellini ( I used spinach and cheese)
• 1 tbsp butter
• 2 tbsp flour
• 1 1/2 cup heavy cream
• 1/3 cup Parmesan cheese (I added a handful)
• baby spinach (small bag)
• 14 oz petite diced tomatoes
Melt butter in pan over medium heat; prepare tortellini according to instructions.
Add flour mixing well until flour is completely coated by butter.
Slowly add in heavy cream, stirring continuously until sauce thickens and there are no clumps.
Add in parmesan cheese and stir until well mixed.
Add in spinach and diced tomatoes (do not drain).
Lastly, add in cooked tortellini. Mix & serve with garlic breadsticks!
